Professional Program

The Professional Program is comprised of multiple series and individual classes that focus on subject matters that are critical to succeeding in the tea industry.

The Professional Program also requires a 50 hr internship after completing the advanced classes.

INTRODUCTORY CLASSES

Introduction to Oolong Teas I

Learn about the history of oolong tea in Taiwan from the Second Opium War to the present. Students will also develop techniques to correctly brew every steep of a ceremonial-grade oolong tea.

INTRODUCTORY CLASSES

Introduction to Oolong Teas II

Students will review the techniques they learned in the previous class and will learn how to correct poorly brewed steeps, and then compete against each other to brew the best multi-steep oolong tea.

Ceremonial Grade Tea Brewing

This class will demonstrate how to wake up the tea leaves in addition to all the previously learned techniques. Students will finish with a competition on who can brew the best five-steep oolong teas.

Tea Grading

In this course the students will learn to grade teas based on our grading system. Students will taste teas of different grades and identify what makes a tea of a certain grade. Lastly, each student will pass an exam on blind tasting and grading.

INTERMEDIATE CLASSES

Tea Blending Techniques

This class is focused on the techniques used to blend and roast the teas. Students will learn how to balance different flavors with certain teas and how to enhance the qualities of certain teas. Students will also learn how to test and source herbs from different suppliers to make their own blends.

Crafting Milk Teas

This class will teach the students how to brew and blend teas to make milk teas. Students will understand the difference between different milks and suppliers, how to source ingredients and how to set up scalable orders.

Business Management

This class will teach students how to set up the tools to manage a tea shop. Students will be exposed to the different management tools, apps, and best practices for the industry. Students will also learn about how to source ingredients and generate a profit.

ADVANCED CLASSES

Tea Roasting

This class is held in our farms in Lu-Gu. Students will learn about planting tea trees, harvesting the leaves by hand, processing the leaves, and finally roasting them. This is a one-month course designed for those serious about understanding the whole process of tea-making.
