While the tea shop is still closed, we wanted to keep everyone updated with the new and exciting pop-ups that we are currently doing. For the month of July, we are featuring a limited pop-up with Marble Dessert Bar!
Chefs Mauro and Maya are the owners of Marble, and worked in China, Spain, the US, and many many places, focusing solely on desserts made with the freshest ingredients. Their disdain for things such as stabilizers and artificial flavorings made them a very logical choice for a collaboration, as that is what we are all about as well!
In addition, their biggest draw is using fresh and local fruits to make out-of-this-world mini desserts. So, we talked for a few days and designed three fruit teas with the most amazing milk foam (奶盖) as a challenge to all the other tea shops featuring fruit teas with milk foams out there. Try making something healthier or tastes better. PROTIP: You can’t.
The base of these fruit teas are from three iced teas that we always use. Our Jasmine Blend No. 4, Black Rose Blend No. 1, and Earl Grey Blend No. 2. Each of these teas were created by Jaesy back in 2016, and have done splendidly in our tea shop. Remember the Jasmine Honey Milk Tea?
So using these three as the bases, Mauro and Maya added fresh grapefruits to the Jasmine, salted lemonade to the Earl Grey, and a honey to the Black Rose. In addition, the milk foam was made with heavy cream infused with the tea itself. All of these are combined to go with three desserts.
What you see above is the Black Rose paired with a dulce de chocolate with hazelnut and banana. It is amazing, and has gold flakes on it. Just wanted to mention the gold. The other two pairings include a yuzu and strawberry cake, and a mango+lychee+lime cake. All very fresh, very fruity, and very delicious.
